Get out the bikes or put on some hiking shoes and head out for the afternoon. Find a local trail, load up on snacks and water and explore the routes you would never take on your way to work.

Parisian Picnic Sandwiches (Serves 2)

1 loaf French bread 2 tsp butter 2 tsp Dijon mustard Black pepper 1 avocado 8 slices Black Forest ham 4 slices Swiss cheese

  1. Trim 1/4-inch from each end of the French bread and then cut the loaf into four equal pieces. Slice each piece along one side, leaving the other side as a hinge. Spread the slices open so they are flat.

  2. Peel and pit the avocado and cut into thin slices.

  3. Mix the butter, Dijon mustard and pepper until it's creamy, and then spread on both sides of the bread. Layer cheese, ham and avocado onto one side of each sandwich.

  4. Close the sandwiches, wrap in wax paper and keep each closed with two elastics. Refrigerate until you're ready to head out.
